Ingredients:

  • 2 cups Red Amaranth leaves, washed and chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • A pinch of asafoetida (hing)
  • 1 tablespoon oil (preferably coconut or sesame oil)
  • Salt to taste
  • Freshly grated coconut for garnish (optional)

 Instructions:

Step 1: Prepare the Tempering

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds; let them splutter.
  3. Add cumin seeds, dried red chilies, and asafoetida. Sauté for a few seconds until aromatic.

Step 2: Sauté Aromatics

  1. Add finely chopped onions to the pan. Sauté until translucent.
  2. Stir in minced garlic and sauté for an additional minute.

Step 3: Add Amaranth Leaves

  1. Add the chopped Red Amaranth leaves to the pan.
  2. Sprinkle salt to taste.
  3. Stir well, cover, and cook for 5-7 minutes until the leaves wilt and are tender. Stir occasionally to prevent sticking.

Step 4: Garnish and Serve

  1. Once cooked, remove from heat.
  2. Garnish with freshly grated coconut if desired.
  3. Serve hot with steamed rice or rotis.
