Masala Dosa

Golden, crispy crepes filled with a spiced potato mixture, Masala Dosa is a South Indian classic that’s both comforting and festive.

Ingredients for Dosa Batter:

  • 2 cups parboiled rice
  • ½ cup urad dal
  • 1 tsp fenugreek seeds

Ingredients for Masala Filling:

  • 3 large potatoes, boiled and mashed
  • 1 onion, thinly sliced
  • 1 tsp mustard seeds
  • 1 green chili, chopped
  • Curry leaves
  • Turmeric powder
  • Salt to taste

Method:

  1. Soak rice, dal, and fenugreek seeds for 6-8 hours. Grind to a smooth batter. Ferment overnight.
  2. For the filling, sauté mustard seeds, curry leaves, onions, and green chilies in oil. Add turmeric and mashed potatoes. Mix well.
  3. Heat a dosa pan. Spread a ladleful of batter in a circular motion. Drizzle oil.
  4. Place a spoonful of filling in the center, fold the dosa, and serve with coconut chutney and sambar.
