Masala Dosa
Golden, crispy crepes filled with a spiced potato mixture, Masala Dosa is a South Indian classic that’s both comforting and festive.
Ingredients for Dosa Batter:
- 2 cups parboiled rice
- ½ cup urad dal
- 1 tsp fenugreek seeds
Ingredients for Masala Filling:
- 3 large potatoes, boiled and mashed
- 1 onion, thinly sliced
- 1 tsp mustard seeds
- 1 green chili, chopped
- Curry leaves
- Turmeric powder
- Salt to taste
Method:
- Soak rice, dal, and fenugreek seeds for 6-8 hours. Grind to a smooth batter. Ferment overnight.
- For the filling, sauté mustard seeds, curry leaves, onions, and green chilies in oil. Add turmeric and mashed potatoes. Mix well.
- Heat a dosa pan. Spread a ladleful of batter in a circular motion. Drizzle oil.
- Place a spoonful of filling in the center, fold the dosa, and serve with coconut chutney and sambar.
