Golden Green Amaranth Stir-Fry (Keerai Poriyal)

Ingredients:
- 2 cups Golden Green Amaranth leaves, washed and chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 dried red chilies
- A pinch of asafoetida (hing)
- 1 tablespoon oil (preferably coconut or sesame oil)
- Salt to taste
- Freshly grated coconut for garnish (optional)
Instructions:
Step 1: Prepare the Tempering
- Heat oil in a pan over medium heat.
- Add mustard seeds; let them splutter.
- Add cumin seeds, dried red chilies, and asafoetida. Sauté for a few seconds until aromatic.
Step 2: Sauté Aromatics
- Add finely chopped onions to the pan. Sauté until translucent.
- Stir in minced garlic and sauté for an additional minute.
Step 3: Add Amaranth Leaves
- Add the chopped Golden Green Amaranth leaves to the pan.
- Sprinkle salt to taste.
- Stir well, cover, and cook for 5-7 minutes until the leaves wilt and are tender. Stir occasionally to prevent sticking.
Step 4: Garnish and Serve
- Once cooked, remove from heat.
- Garnish with freshly grated coconut if desired.
- Serve hot with steamed rice or rotis.
