Ingredients

Dry Spices:

  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds

  • 1/2 tsp asafoetida (hing)

Whole Spices:

  • 2-inch cinnamon stick
  • 5-6 cloves
  • 2-3 green cardamom pods
  • 1 tsp black peppercorns

Chilies:

  • 6-8 dried red chilies (Byadgi highly recommended. Adjust to taste)

Lentils:

  • 2 tbsp chana dal (split chickpeas)
  • 1 tbsp urad dal (split black gram)

Curry Leaves:

  • 1 sprig fresh or dried curry leaves

Instructions

  1. Dry Roast the Ingredients:
    • Heat a heavy-bottomed pan on medium heat.
    • Add chana dal, urad dal, and coriander seeds. Roast until aromatic and lightly golden. Remove and set aside.
    • In the same pan, roast cumin, fenugreek seeds, mustard seeds, black peppercorns, and sesame seeds until they start to splutter.
    • Add the cinnamon stick, cloves, and cardamom. Roast briefly until the aroma intensifies.
  2. Toast the Chilies and Curry Leaves:
    • Roast the dried red chilies and curry leaves separately in the same pan. Ensure they do not burn.
  3. Cool the Ingredients:
    • Spread all roasted ingredients on a plate and allow them to cool completely.
  4. Grind to a Powder:
    • Transfer the cooled spices to a dry grinder or blender. Add asafoetida.
    • Grind into a fine powder. For best results, do this in small batches.
  5. Store:
    • Transfer the Bisi Bele Bath Masala Powder into an airtight container. Store in a cool, dry place. Use within 2-3 months for the best flavor.
